Our Ube loaf started off as a Rize Up behind-the-scenes loaf, and now it's one of our most sought after loaves! Ube is a sweet purple yam with a hint of coconut flavor. I really wanted to make the flavor pop, so I learned how to make a Filipino ube halaya (ube jam) from two local Filipinx chefs, Ren from Ube Area bakery and Joana, a pastry chef from Abaca restaurant.
From that day forward, we have been doing the painstaking work of sourcing and treating all the ingredients with the respect that they deserve. We are so grateful when our community shares some of their cultural knowledge, and we are proud to represent a few flavors from our Filipino fam.
